Okra & Tomatoes

Fresh bright green okra and deep red ripe sweet tomatoes deliver in this classic light summer stew. 

Simple, fresh, delicious. Nothing better.

I seriously could eat the whole pot!

^^and not feel guilty about it either!^^

What you’ll need:

2 large ripe fresh (and local) tomatoes! (Cut into large sections)

1 onion (roughly chopped) 

About 1/2 pound okra (1/2 left whole 1/2 cut)

1 ear corn (husked and sliced off the cob)

1/4 tsp each: paprika, pepper , garlic powder (** 🌶 spicy add cayenne and red pepper flakes too)

1/2 tablespoon each: salt and sugar

1 tablespoon apple cider vinegar

  1. Throw all ingredients in pot. Add spices. Fill with water almost to top of vegetables.
  2. Bring to boil, lower heat to lowest setting and cook for a few hours until the vegetables are tender. The longer and slower it stews the better it will be!
  3. Add salt and pepper if needed
