Simple. Fresh. Easy.
This is an easy recipe to try that is not only very inexpensive and simple but it’s really handy for packing lunches throughout the week. I feel better packing my husband or children real potatoes with ingredients I can identify than anything prepackaged or crackers/chips.
You can really add anything to this, there’s not much to it. Chop potatoes to desired size, toss with olive oil and spices you prefer (I used fresh dill and season salt).. arrange in one even layer on a baking sheet.
