Chili Lime Mango Chicken

This is a very versatile, healthy and satisfying dinner! It has tons of flavor. The perfect balance of spicy and sweet! Paired with a delicious salad!

The vegetable and mango in the marinade melt away when cooked leaving the chicken moist, tangy and sweet! So good!!



What you’ll need:

1 pound boneless chicken breasts 

1/2 diced mango

1 clove minced garlic

1/2 minced jalapeño 

1/2 minced onion

Juice of 1 lime

1 tsp Adobo seasoning

1 tsp chili powder

Cilantro *optional*

Tortillas *optional*

  1. Marinate chicken for about 30 minutes with all of the ingredients above
  2. Heat up a pan with olive oil and add in marinade and chicken. Cook on high 
  3. Once you have color on both sides add 1/3 cup of water, cover and cook on low
  4. Shred with a fork and add salt as needed

I served mine on a tortilla with salsa and a delicious salad on top!
