Turkey Sausage Hash

I absolutely love serving this meal. Not only is it great but it is a beautiful breakfast dish! 

I lighten it up where I can by using turkey sausage, half sweet potatoes and low fat sour cream. 

What you’ll need:

Serves 4

Cast iron or oven safe skillet

1 pound ground turkey sausage ( or whichever type you prefer )

1 small sweet potato peeled and diced

1 white potato peeled and diced

1/2 minced onion

1/4 cup salsa

1/2 cup chicken stock

1 teaspoon paprika

2 tablespoons low fat sour cream

Sprinkle of cheese

4 eggs

Preheat over to 375 degree F

  1. Brown you sausage with potatoes, paprika and onion. When sausage is cooked through drain grease (if there is any). Pour in chicken stock and salsa lower heat and simmer until reduced by half.
  2. Stir in sour cream. Sprinkle cheese of your choice on top.
  3.  Crack four eggs onto hash. 
  4. Bake for 15-30 min depending on how done you’d like your eggs. For runny eggs 15 minutes for completely cooked eggs 30.
