Buffalo Chicken Melt

Chicken in yummy spicy buffalo sauce on a cheesey melt. What can be better than that?

What you’ll need:

(Makes about 5 sandwiches)

For chicken filling: 

1-2 pound whole chicken (or whichever cut of meat you prefer.. cooked and picked or pulled. (I boil a small chicken and make stock, so I’m doing two things at once)

1/3 cup buffalo sauce

1 tablespoon ranch

1 tablespoon soy sauce

1 tablespoon vinegar 

1 tablespoon mayonnaise 

For sandwich:

Preferred bread

Mexican blend shredded cheese

A slice of American cheese for each sandwich

Softened Butter 

  1. Stir all sauces into cooked and shredded chicken. -Do this ahead of time! The longer the chicken sits in sauce the better it will be.
  2. Lightly butter two slices of bread and assemble sandwich on the not buttered side, slice of American cheese, generous spoonful of chicken mixture, sprinkle of shredded cheese.
  3. I cooked mine in a George foreman which makes cleanup easier. These easily can be made on the stove like any traditional grilled cheese! Cook each side until nice and golden on medium-high heat. Cheese inside should be melted!

These are so delicous! 

Here is my low-carb version! I made these for my family but I needed to stay on track! So I topped the delicious chicken mixture with some thinly slice cabbage and red onion!
