Chicken in yummy spicy buffalo sauce on a cheesey melt. What can be better than that?
(Makes about 5 sandwiches)
For chicken filling:
1-2 pound whole chicken (or whichever cut of meat you prefer.. cooked and picked or pulled. (I boil a small chicken and make stock, so I’m doing two things at once)
1/3 cup buffalo sauce
1 tablespoon ranch
1 tablespoon soy sauce
1 tablespoon vinegar
1 tablespoon mayonnaise
Mexican blend shredded cheese
A slice of American cheese for each sandwich
- Stir all sauces into cooked and shredded chicken. -Do this ahead of time! The longer the chicken sits in sauce the better it will be.
- Lightly butter two slices of bread and assemble sandwich on the not buttered side, slice of American cheese, generous spoonful of chicken mixture, sprinkle of shredded cheese.
- I cooked mine in a George foreman which makes cleanup easier. These easily can be made on the stove like any traditional grilled cheese! Cook each side until nice and golden on medium-high heat. Cheese inside should be melted!
