Lemon Pudding Cake


This is a delicious homemade cake with a fluffy top and an almost custard like pudding bottom. It is a great dessert to bring into Spring with lemon notes and a light texture. Sure to please!

Preheat over to 350


What you’ll need:

3 eggs separated (save whites and yolks)

1/2 cup lemon juice

2 tsp lemon zest

1 1/4 cup milk

1 cup sugar

1/3 cup flour

1/4 tsp salt

2 tablespoons butter

1 1/3 QT casserole dish

Pan of hot water

  1. Beat egg yolks slightly with lemon peels and juice
  2. Stir in milk, sugar, flour, salt, and butter. Mix well.
  3. Beat egg whites until stiff but not dry, fold in blend.
  4. Turn into an baking dish
  5. Place in pan of Hot water and bake for 45 minutes (or until top is brown and knife inserted comes out clean)

Serves 8
