Healthier Spaghetti 

I try to find little substitutions that make my weeknight meals a little healthier. I’ve found switching out beef for poultry really has helped. It’s an easy (and sometimes cheaper) lifestyle change! The only thing I’ve found is it requires a little bit heavier seasoning. A pinch more salt, getting creative with herbs and maybe even adding some wine! Everything is better with wine.

Get all your veggies prepped ( I also like to add mushrooms ) and throw them in with a pound of ground turkey, a hefty pinch of salt and some red pepper flakes.

Get that nice and cooked through! Then add your garlic and tomato paste. Letting it all cook together for a few minutes to get nice and thick. (Not too long, don’t burn your garlic)

Now this part is optional.. And some people don’t like the flavor of wine. However if you’re like me and you do pout in about 1/4-1/3 cup of DRY red wine!


Let all these flavors slowly simmer together for a little while. 

Add your herbs then pour in your jar of spaghetti sauce. Annnnd DONE! A delicious healthier tangy full of flavor sauce! 


* serve this with spaghetti squash noodles or whole grain for an even healthier dish


RECIPE:

1 pound ground turkey

1/2 onion finely chopped

1/2 pepper finely chopped

1 minced garlic clove

1 small can tomato paste

1 jar spaghetti sauce

Fat pinch of roughly chopped parsley

*optional* 1/4 cup Dry red wine

  1. Cook turkey with salt, peppers and onions
  2. Add tomato paste and garlic. Let flavors come together for a minute or two.
  3. Pour in your wine.
  4. Let this simmer for about 5 minutes.
  5. Last add in parsley and spaghetti sauce. The longer it cooks on low from here the better it will be!

Serve with your choice of noodles, whole grain noodles, or a veggie noodle alternative!
